A Recipe to Warm Up Those Winter Weekend Mornings
There’s a lot to love about winter…but chilly mornings aren’t on that list! Fortunately, we’ve got a hearty and healthy breakfast recipe that will start your Saturday (or Sunday) morning with a smile!
Whole Wheat Pancakes with Cinnamon Apple Compote
Pancake Ingredients:
2 cups white whole-wheat flour
4 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
2 teaspoons sugar
2 large eggs
2 cups + 2 tablespoons milk
2 teaspoons vanilla extract
Cooking spray
Instructions:
Mix dry ingredients in a bowl, then add the wet ingredients and combine without over-mixing.
Lightly oil a large skillet with cooking spray and place on low heat.
Pour desired amount of pancake batter into the skillet. When the pancakes start to bubble and the edges start to set, it’s time to flip. Repeat until you’ve cooked all of the batter.
Cinnamon Apple Compote Ingredients:
4 Gala or Granny Smith apples, diced small
1 tablespoon salted butter
2 teaspoons brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Juice of one fresh orange
Instructions:
Melt butter in skillet over medium heat, and then add diced apples. Cook until softened, stirring frequently.
Add cinnamon, brown sugar, vanilla extract and orange juice to skillet. Stir and simmer until bubbly.
Serve over warm pancakes and enjoy!
